Beer comes down to four ingredients working together: malted grain for sugar and color, hops for bitterness and aroma, yeast to turn that sugar into alcohol and COβ‚‚, and water to tie it all together. Get a little temperature control right, stay clean, and you can make beer you'd happily hand to a friend.

Here's the reassuring part: if you've been thinking about brewing for a while, you probably already own most of what you need. A few empty bottles, a big pot, and a bit of counter space go a long way. You can start with almost nothing and still pour a genuinely good glass at the end.

This is a hobby that welcomes both extremes. Begin bare-bones and upgrade only when you feel like it, or jump straight to a fuller setup β€” both paths work. The things that consistently matter are simple: get started, keep a few notes, and give the beer time.

The real fun shows up after your first batch. You crack one open while brewing the next, taste what worked, and quietly tweak the recipe for round two. That loop is the whole hobby β€” and it's a lot closer than most people think.

What you actually need

The bare-minimum kit when you already have extract, yeast, and bottles

You've got the extract. You've got a pack of yeast. You've got a stack of empty bottles waiting in the garage. Congratsβ€”you're already most of the way there. The rest is almost insultingly simple.

Here's the absolute bare minimum to turn that into a batch without buying a single shiny stainless toy:

  • A pot. Three gallons is enough if you're doing a partial boil. Five is nicer. Whatever you've got that can hold water and not melt. You're just boiling the extract with some water so the hops (if you're adding them) can do their thing and the wort gets sterilized.
  • A fermenter. A clean food-grade plastic bucket with a lid works great. A big glass jar, a carboy if you have one, even a cleaned-out water-cooler jug in a pinch. Just something food-safe that holds the volume and seals up. (Skip anything that used to hold pickles or other strong smells β€” those never fully wash out.)
  • A way for the COβ‚‚ to escape. A proper airlock and bung is ideal and costs almost nothing. A balloon with a pinprick in it taped over the hole also works and has the added entertainment value of inflating like a sad party decoration.
  • Sanitizer. This is the one thing you cannot skip or half-ass. Star San, iodophor, or even a careful bleach solution you rinse the hell out of. Everything that touches the cooled wort or the finished beer needs to be clean enough that the yeast is the only thing growing in there.
  • A bottle capper and some caps. You already have the bottles. Caps are cheap. A wing-style capper is maybe fifteen bucks and will last longer than your interest in the hobby (or notβ€”either way it's fine). Really need bottles? You can grab flip-top bottles (no capper needed) or plain beer bottles β€” though honestly, you may as well buy a case of beer, drink it, and keep the empties. Who buys empty beer bottles? Check your local bar, too; plenty will save capped bottles for you (twist-offs won't reseal with a capper).

That's it. No siphon required if you're careful and don't mind a little sediment in the bottles. No fancy thermometer if you're willing to trust that a rolling boil is hot enough and that the wort will eventually cool on the counter or in an ice bath in the sink. No hydrometer for the first few batchesβ€”just taste it later and decide if you like it.

You can make perfectly drinkable beer with exactly this list β€” it's been done on hotplates and in kitchens barely big enough to turn around in. Your first batch won't win awards, but it'll be beer you made, and that first genuinely good sip makes the whole minimal setup feel like a win.

There are basically two ways to make wort, and one of them hands you a big head start. Begin with extract, get comfortable over a few batches, then graduate to all-grain whenever curiosity strikes. There's no rush and no wrong order.

Extract brewing with specialty grains

Extract plus a handful of specialty grains is the sweet spot for a first or second batch β€” real color, flavor, and body without a mash tun or a chemistry degree. Here's the whole process, start to finish, kept as simple as it gets.

Sanitize everything first

Anything that will touch the cooled wort or the finished beer needs to be sanitized β€” fermenter, spoon, airlock, bottles, all of it. The only thing you want growing in there is the yeast you paid for. Anything else turns your beer into science-fair regret.

Steep your specialty grains

Heat 2–3 gallons of water in your pot to about 150–160Β°F. Drop the grains in (in a muslin/mash bag or something you can pull out later) and let them steep 20–30 minutes. This is just hot tea β€” you're pulling color, flavor, and a little body out of the grain without converting any starch. Don't let it boil, or you'll drag out harsh tannins and make the beer astringent.

Not every batch comes with grains β€” plenty of extract kits skip them. If yours didn't include any, ignore this step and start at the boil.

Pull the grains, bring it to a boil

Lift the grain bag out, let it drip for a bit, then toss it β€” you're done with the grains. Bring the liquid up to a boil. From here you're just making a hoppy sugar water that the yeast will later turn into beer.

Off the heat, stir in your extract

Once it's boiling, kill the heat for a second and stir in the extract until it's fully dissolved, then turn the heat back on and bring it back to a boil. Dumping extract into a rolling boil scorches it on the bottom of the pot, and scorched extract tastes exactly as bad as it sounds. Watch the pot like a hawk when it comes back up β€” a boilover will happen if you look away, especially in a small pot.

Add hops, boil 60 minutes

Add hops according to your recipe and boil a full 60 minutes. The boil sterilizes the wort, drives off compounds you don't want, and pulls bitterness from the hops. Timing is the whole trick:

  • Hops at the start of the boil give you bitterness
  • Hops with 15 minutes left give flavor
  • Hops in the last few minutes give aroma
  • Early is bitter, late is smell-good.

Cool the wort, fast

When the boil's done, cool the wort as quick as you reasonably can β€” an ice bath in the sink works fine. Yeast hates being pitched into hot liquid, so cool it down enough that you don't kill them, and so wild microbes have less time to party before your yeast takes over.

Pour or carefully transfer the cooled wort into your sanitized fermenter, topping up with clean water to your target volume if needed. Then pitch the yeast. This is where the magic starts β€” the yeast eats the sugar and makes alcohol and COβ‚‚. Everything before this was just cooking.

This is the one moment a little splashing is your friend β€” cooled wort wants some oxygen so the yeast can get going. Let it tumble in and aerate. Just keep everything it touches sanitized, so the only thing you're adding is air, not contaminants. (After fermentation starts, it flips: pour gently and keep oxygen away.)

Seal it up and walk away

Seal it with an airlock (or the sad balloon method) and set it somewhere out of direct sunlight at a reasonable room temperature. Leave it alone for 1–2 weeks. Fermentation looks boring β€” bubbles, then quiet β€” so don't open it every day to check. Patience is the actual secret ingredient.

When it's done (airlock slows way down, or you just wait out the full time), bottle it with a little priming sugar, cap it, and wait another 1–2 weeks. The yeast left in the bottle eats that sugar and makes the bubbles. Don't rush it β€” too soon and you get flat beer or bottle bombs, and neither is ideal.

All-Grain Brewing

Once extract feels routine, all-grain is the natural next step. Instead of buying your sugars pre-made, you create them yourself by mashing crushed grain. It's a longer brew day with a bit more gear, but you control every variable. The back half β€” boil, cool, ferment, bottle β€” is identical to extract, so you already know it. Only the front end is new.

Mash the grain

Mix your crushed grain with hot water in the mash tun and settle in around 148–158Β°F. Hold it there for about an hour while the enzymes turn starch into sugar. Where you land in that range matters: aim low for a drier, crisper beer, aim high for something fuller and maltier. This is the dial that used to be hidden inside the extract.

Mash out and recirculate

Bump the temp up to about 168Β°F to lock things in and loosen the mash so it drains well. Then draw off the first runnings β€” they'll come out cloudy β€” and gently pour them back over the top. Do that until they run clear. You're basically letting the bed of grain husks become its own filter.

Slowly trickle ~170Β°F water over the grain to rinse out the sugar it's still holding onto, collecting runnings until your kettle hits its pre-boil volume. Slow and steady wins here; rushing it leaves sugar behind.

Now you're back on familiar ground. Boil that wort a full 60 minutes with the same early-for-bitter, late-for-aroma hop schedule you used with extract. Keep the lid off and let it go hard β€” a good rolling boil drives off the stuff you don't want in the finished beer.

From here it's identical to your extract batches: chill it fast to ~70Β°F, take your Original Gravity, pitch the yeast, ferment a week or two, then bottle and wait. Everything you learned on the easy path still applies.

Common first-timer questions

How much does it cost to start?

A basic extract starter kit (just about everything you need to start, except the bottles and a recipe kit) plus an ingredient kit typically runs about the price of a nice dinner out. After that, each 5-gallon batch β€” roughly 50 bottles β€” usually costs less per beer than buying craft beer.

What's the #1 mistake beginners make?

Poor sanitation and fermenting too warm. Sanitize everything that touches the beer after the boil, and keep fermentation in the yeast's happy range (around 65–70Β°F for most ales). Nail those two and your beer will taste clean.

How long until I'm actually drinking it?

Plan on roughly three to four weeks: one to two weeks fermenting, then about two weeks of bottle conditioning to carbonate. It's slow, but almost all of that is hands-off waiting.

Do I need to be exact with measurements?

Temperatures and sanitation matter most. Ingredient weights have some wiggle room β€” beer is resilient. As you brew more, a hydrometer helps you dial in consistency and calculate your ABV.

Is homebrewing legal?

Wort, mash, sparge, OG, IBU, pitching, priming β€” every bit of brewing jargon in one place, in plain English.

ABV (Alcohol By Volume)

The percentage of alcohol in the finished beer. Calculated roughly from the drop in gravity (Original Gravity minus Final Gravity). Most homebrew ales land between 4–7%.

Adjunct

Any fermentable ingredient that isn't malted barley (rice, corn, oats, wheat, honey, sugar, etc.). Used for extra fermentables, body, or flavor.

Airlock

A small one-way valve that sits on the fermenter. It lets COβ‚‚ escape while keeping air and contaminants out.

Ale

Beer fermented with top-fermenting yeast (usually Saccharomyces cerevisiae) at warmer temperatures (roughly 60–72 Β°F / 15–22 Β°C). Typically fruitier and more aromatic than lagers.

All-Grain Brewing

Brewing that starts with crushed malted grains and extracts the sugars yourself through mashing. More control and equipment than extract brewing.

Alpha Acids

The compounds in hops that create bitterness when boiled. Higher percentage = more potential bitterness.

Attenuation

How much of the available sugar the yeast converts into alcohol and COβ‚‚. Higher attenuation = drier, thinner beer; lower = sweeter, fuller beer.

Boil

The step where wort is boiled (usually 60 minutes). It sterilizes the liquid, concentrates it, and extracts bitterness from hops.

Bottle Conditioning

Natural carbonation that happens in the bottle after priming sugar is added. Yeast eats the sugar and produces COβ‚‚.

Carboy

A large glass or plastic jug with a narrow neck used as a fermenter. Common sizes are 5–6.5 gallons.

DME / LME

Dry Malt Extract (powder) or Liquid Malt Extract (syrup). Concentrated malt sugars used in extract brewing so you don't have to mash grains.

Extract Brewing

The simplest method for beginners. You dissolve malt extract in water instead of mashing grains. Faster and requires less equipment.

Fermentation

The process where yeast converts sugars in the wort into alcohol and carbon dioxide. This is what turns wort into beer.

Final Gravity (FG)

The specific gravity of the beer after fermentation is finished. Lower FG usually means a drier beer.

Gravity / Specific Gravity

A measure of how dense the liquid is compared to water (water = 1.000). Higher numbers mean more dissolved sugars.

Hops

The flower cones of the hop plant. They provide bitterness, flavor, aroma, and act as a natural preservative.

Hydrometer

A simple floating instrument that measures specific gravity. You use it to take Original Gravity and Final Gravity readings.

IBU (International Bitterness Units)

A scale that estimates the bitterness of beer from hops. Higher number = more bitter.

Krausen

The foamy head of yeast and proteins that forms on top of the beer during active fermentation.

Lager

Beer fermented with bottom-fermenting yeast at cooler temperatures (roughly 45–55 Β°F / 7–13 Β°C), then often cold-conditioned. Typically cleaner and crisper than ales.

Malt / Malted Barley

Barley that has been soaked, germinated, and dried. It provides the fermentable sugars and most of the flavor and color in beer.

Mash

The process of mixing crushed malted grains with hot water so enzymes can convert starches into fermentable sugars.

Original Gravity (OG)

The specific gravity of the wort before yeast is added. It tells you how much sugar is available and helps predict final alcohol content.

Pitching

Adding yeast to the cooled wort to start fermentation.

Priming Sugar

A small amount of sugar (usually corn sugar or table sugar) added at bottling time to create carbonation inside the bottles.

Racking

Transferring beer from one vessel to another (usually with a siphon) to leave sediment behind.

Sanitization

Killing or reducing microbes on equipment that will touch the wort or beer after the boil. The most important step for avoiding spoiled batches. (Cleaning removes dirt; sanitizing kills microbes.)

Sparge

Rinsing the mashed grains with hot water to extract as much sugar as possible before boiling.

Trub

The sediment of proteins, hop bits, and dead yeast that settles at the bottom of the kettle or fermenter.

Wort

The sweet, unfermented liquid created after mashing (or dissolving extract) and boiling. Yeast turns wort into beer.

Yeast

The living microorganism that eats sugars and produces alcohol and COβ‚‚. Different strains create different flavors (ale yeast vs. lager yeast, etc.).
